About Vietnam oolong tea, yellow tea and matcha
Oolong tea sits between green and black tea: the leaf is partially oxidized, then rolled into small, tight balls that open slowly in the pot and can be infused several times. The oolong tea we produce at Goo Farm is a green, lightly oxidized oolong of the Jin Xuan grade, with a bright yellow liquor, a floral and milky aroma and a light, sweet, creamy taste. It is brewed at 80 to 85 °C for one to three minutes and is used for loose-leaf tea, premium pyramid tea bags and milk tea.
Our yellow tea is a rarer specialty made from carefully picked young leaf and buds: long, slightly curled leaves that give a bright orange liquor, a honey-like aroma and a mellow, slightly fruity taste with floral undertones.
Our matcha green tea is a fine green tea powder in four grades (STD M1, M2, M3 and M11). Whisked with water it gives a bright green, frothy cup, and it is used for lattes, desserts and drinks.
All three are produced in smaller quantities than our black and green grades, so availability and container loading are confirmed per order. Our guide to Vietnam oolong tea explains how the tea is made, what the Jin Xuan grade means, how to read an oolong specification, how to brew and store it and how to buy it in bulk. For brewing tips, see our oolong brewing guide (temperature, ratio and steep times).
